My HUB has been on the same firmware for several weeks. You've always had 32 3.0 channels: the maintenance triggered a download that fixed the software on the Superhub so that it displays the channel count correctly.
Your areas may have more than 32 3.0 channels, many do, however the modem in the Hub can only lock to 32 x 3.0 + 2 x 3.1 channels at once.

The channel was definitely there all the time: cable modems with the same radios in the USA show the same issue even when you can see channel stats for the 32 channels: they start counting downstream channels from 0 rather than 1 so claim 31.
Channel ID changes at VM would also explain the difference.
It was between 1am and 6am for me but the connection was only down for about 15 minutes. Have had the Hub 5 randomly rebooting at 2am on Tuesday and Wednesday. Not sure why, didn’t appear to be doing any updates. Works fine otherwise though.I have network maintenance in my area Friday over night 10pm till 10am, was yours like that too? I have 31 right now but will post back if get 32.
I was kind of wondering if its in preparation for Gig2 on HFC, they did similar nationwide upgrades before nationally launching Gig1
