Coming to this a bit late now, but Odido do eSIMs by the look of it. So, if they do (you would have to check with them direct, as I only got that info from an Odido community page), why not just get a UK physical SIM now, swap out the physical Odido SIM (keeping it safe for reinsertion as and when required) for the UK SIM, then when back in the Netherlands, having reinserted your Odido physical SIM, convert that to an eSIM?
As to which UK SIM, that's up to you, but, with banking and no credit history being an issue and wanting a cheap option that does WiFi calling and VoLTE, I'd suggest Smarty (which is a Three signal) since there's no credit check (you pay up front), and this does WiFi calling and VoLTE (my son has an iPhone 11 and daughter an iPhone 12 and both these are available to them).
