@Koda Do you know what data is actually processed in China / Hong Kong if multiple areas are done via EE and within UK. Just from your own knowledge in the industry
To my knowledge, it shouldn’t be any more than your name, address, date of birth and email/phone number.

Payments are processed within the EU using Adyen last time I checked, and your actual usage is handled locally so things like your web browsing data, text messages and calls are all on EE’s own systems here and shouldn’t be accessible to the staff in Hong Kong - Aside from obviously the basic details allowing them to generate accurate bills (seeing you sent a text to X number, but not the contents of the text even if they wanted to act maliciously)

Unless you’re using their SIM within Chinese territory you aren’t using their own network. Similarly most of the systems and servers belong to the likes of EE and their partners within the UK so not something they can manipulate in any malicious way to spy on you or anything.

Like I said before though if you don’t feel comfortable with it others like 1P are available and owned by well known companies which are all UK based - And not a huge price difference in it. Saving something like a pound per month probably isn’t worth the worry if it you’re still questioning if it’s a wise choice to sign up with them. While I am fine with signing up to a Chinese company and them holding my data in HK, I appreciate that many others wouldn’t even consider it.

Yeah the annual sim works great for son £60 v £18.

The £11 for 60GB and 4GB turkey roaming is better than the £10 for £25GB.

Can't see me spending more than 4GB when roaming abroad with WiFi most places.
