Which ones exist that keep me on EE's network but not at the insane pricing?

Dont care for 5G, but still want decent 4G performance, number port, and ideally automated billing not needing to do topups and the like.

To The Moon and Plusnet still don’t support VoLTE nor do they support B20.

I believe 1pMobile is one of the few that does.

Having said that, if you twist EEs arm a little they have decent-ish deals too if you go through retentions, or through BT Mobile if you “claim” you’re a BT Broadband customer (they don’t check). Besides the annual price rises they have very competitive prices on offer. Almost tempted me away from iD…

I use 1pmobile and I can't fault them, get to use EE infrastructure at reasonable prices including 4G calling, WiFi calling and 5G which PAYG EE users don't get.
 
Wish their website was a bit more appealing!
I don't actually mind, as long as the network does what it says it does than I'm not too bothered what the site looks like.

Compared to the other networks, EE is the only option here.
 
I was told 'unofficially' that you get an instant 30% any PAYM SIM tarriff if you're a PAYG to PAYM 'Conversion'. To put it simply you buy a PAYG SIM from a service station or something like that... then contact the web team on the EE website and say you're a PAYG customer who was looking at PAYM, the EE web team then have access to give you 30% off as a "Conversion" PAYM from PAYG.

However, I would advise doing this after 1st March as if you do this before you're still liable to the 2023 pay increase, after this date I believe (but not 100% sure).

I am debating re-joining EE myself as their coverage is just a level above everyone else and this would seem to be the cheapest way of joining them.

Take a look at Scancom; they sell EE prepaid SIM cards. You will need to buy a new card after 18 months or so but the price is a lot less than an EE contract.
