@JitteryPinger covers pretty much everything - however I'd add that Three/EE's sharing agreement is usually just the mast, sometimes the antennas (pre 5G), and occasionally the backhaul, e.g. if its microwave and their hubs are the same site it makes no sense to setup 2 MW links - rather they just split/allocated a portion of a single link per provider.
Also, with Three/EE's separate antennas they could be oriented in different directions, and/or have different tilt's applied, depending on what other sites exist in the surrounding area and what coverage/interference avoidance is required from a given site. Those physical differences could also impact coverage/speeds in a specific location.
