Huawei 5G CPE Pro Missing Settings

I am in the U.K. and have just received my Huawei 5G CPE Pro router which I purchased from an independent retailer (not a carrier). The router is fully unlocked and is performing extremely well in terms of speeds. However, whilst changing devices over to the network from my previous router, both the Xbox One X and PS4 warned me that the NAT type was strict and Universal Plug and Play (UPnP) was disabled. This is something I would usually be able to resolve myself in settings but I am unable to find the settings in the router. The settings should be under: Advanced - Security. However, under those categories, the only settings that are showing are: Firewall, MAC Address Filter and Domain Filter. There are a lot of settings missing!

Also, I have bought two sim cards from different carriers and this makes no difference either. How do I get these settings? I am looking to purchase a Synology NAS drive for file storage and to become a media server and I'm pretty sure they have to be enabled, I may be wrong.

Even if it’s not from the carrier the device still has a ‘carrier/provider’ etc installed. You can ask where you bought it from is they have a different firmware which isn’t as limited.

What software version does yours have?

Mine is the H112-370, could yours be the H112-372 varient?

Mine is also H112-370 but it is Three branded.

in terms of hardware branding there is no 3 logos or anything like that. It just looks like every other Huawei 5G CPE Pro the only thing is the default Wi-Fi network name:Three_002100

in terms of you UI would definitely say there are differences even the settings come up as Three broadband. I don’t get to change any of network searching options or to enable or disable 5G. I also don’t get any of the SMS settings and unable to receive SMSes.

I do have the SMS section and the UI title is just 'Mobile Broadband' for me, and I think my default WiFi network name was in the format 'Huawei_#####'.

I do not have the option to select the network modes under Network Searching either though.
I put this down to either because there aren't (yet) and SA 5G networks in the UK or that I am not actually in a 5G signal area, so it wasn't giving me the option because of that.

I think mine is unbranded - it certainly doesn't have any provider names splashed through the UI like yours. I got it 2nd hand so it could be originally supplied by Vodafone, assuming they don't actually touching within the software.
It wasn't network locked when I got it and the box/documents did not reference any provider.
I'm not sure it is something I can actually check unless the software version contain a reference to a provider - yours being C21 (for Three) and mine C1217 (for Generic/Vodafone).

Edit: looks like @Buggerlugz cross-posted on thinkbroadband with his B535 software versions - assuming that his B535 was provided by Three then that does add credence to my thought that C21 is Three's software version code.
