My local rural mast uses 3 and EE
I carried out a BT Speed test using a Huawei 535 and TPLink MR500
The results were
Smarty 58down 36up Ping7
Smarty 61 down 32up Ping 7.7

EE 68down 40up Ping27
EE 73down 37up Ping 33

Why the vast difference in the Ping results ?
With little difference in Speed should I use Smarty with the lowest Ping rate ?
 
If the super low ping is what you need then go with that, but in reality even ~30ms from the other network should be perfectly fine for almost every use case too. That's not exactly 'high' levels of latency either.

All I will say is do further testing throughout different times and days. One might be worse depending upon potential congestion for example at different times of day.

Personally I would probably go with whoever can give the best balance of speed vs price, since both pings are totally acceptable in my eyes. But it's really down to personal preference. There isn't a right or wrong answer honestly.
 
Yes, I do notice different speeds during the day, early morning the figures above but then they drop of the 30-35 Mbs download
Both figures are quite acceptable for my use and similar in Data price
O2 an Voda are non existant in the village
