Just to keep this thread updated I'm now at 800 GB consumed for 'this month' (it renews on the 23rd November).Scancom EE user here (4G only area). I blitzed way past 600GB last month and noticed no impact whatsoever.
I've consumed 555GB so far this month (EE Scancom sims tend to run from the 23rd of each month) so I'll likely exceed 600GB again in a few days. As a result, I'll have another opportunity to see if there's any impact.

Still no tangible impact on speeds and with another 10 days to go, I will likely go way over 1 TB for the second month in a row.

To date this month I've consumed 1.16TB with no adverse effect. That's now two months in a row where I've doubled the FUP will no effects.
Your mileage may vary, especially if you're in a 5G area, but in answer to the OP's original question the answer, from my perspective, is "Nothing".
