ZTE MC7010 changed DNS now can't reach configuration page at default IP address

Assuming you have the MC7010 upstream, and a Synology router downstream connecting devices, with DHCP in the Synology LAN, you would be better in all cases to configure the DNS in the Synology LAN and not touch the DNS config in the upstream device.

So I changed the APN settings to manual and set the DNS manually to 1.1.1.1 and 8.8.8.8, instead of recieving it automatically via Vodafone.

After that, not only do I not have any internet, but I can't reach the MC7010 default configuration page at 192.168.254.1 to change the APN back to automatic.

Hmm, so the router DHCP server gives your devices a LAN IP, gateway & DNS ... and then shuts just itself off from the LAN or does it shutdown the LAN (you can't ping other devices)?

I don't know what the Windows commands are but on Linux I'd look at ""ip a" and "ip r" to make sure a device set for DHCP has been set up correctly with IP, subnet, gateway (and route).

It smells like a deliberate lock down but could just be a faulty router. Interested to see how you solve it!

You could just change the DNS on each local machine as a solution. But I think the issue is more down to the access point name and or CGNAT not the DNS selection.
